The inspiration for this dish came from the love for my daughter, who loves mash potatoes and sausages.  Nostalgia takes over whenever I prepare this dish as it was the first mother-daughter dish we prepared together.  Eat up!

Stuffed Cheesy Potatoes Recipe

Ingredients:

  • 2 Big Irish potatoes (cut in halves)
  •  2 Chicken sausages diced into small pieces (or whichever sausage you desire)
  • Margarine
  • Saltfish cooked and broken into small pieces (for stuffing) bacon or any other filling you so desire
  • Sweet peppers (bell peppers) diced
  • Purple onion (diced) as you like or desire.
  • 1tbs olive oil
  • Pinch of black pepper.
  • Two slices of cheese or shredded cheese as you desire for topping.


Directions:

  • Wash, dry, and cut potatoes into halves.
  • Brush with olive oil, place on baking sheet, and place in the oven to bake @350 degrees for 15-20 mins or until baked.
  • Remove baked potatoes from oven and allow to cool enough to handle.
  • Gently use a spoon to scoop out the middle of potatoes and place into a bowl
    (Be sure to leave an inch to serve as a barrier to hold the stuffing).
  • Combine margarine, other ingredients, and stuffing together.
  • Use stuffing to fill potato shells.
  • Place on a tray, top with cheese of your choice, and place in the oven for another 5- 10 mins or until cheese is melted and have a nice light golden color (to your liking).

Remove and serve with whatever you choose.
